Name: John Dory with Morels, Leeks, Truffles and Potato Sauce

Ingredients: Salt and freshly ground black pepper; 175 g (6 oz) salad potatoes, such as Jersey Royal, Charlotte or La Ratte, peeled; 1 fresh or canned black truffle, thinly sliced; 200 ml (7 fl oz) full-fat milk; 100 ml (3½ fl oz) single cream; 10 g (¼ oz) small dried morel mushrooms, soaked in hot water for 30 minutes and then drained; 4 x 175 g (6 oz) John Dory fillets (or other firm white fish); 20 young leeks, cut into 7.5cm (3in) lengths; 100 ml (3½ fl oz) chicken stock; 1 tablespoon chopped chives; 50 g (2 oz) cold unsalted butter
