Method

Cook the new potatoes in boiling salted water for 10 minutes, then drain well and set aside. In a frying pan, dry-roast the cumin and fenugreek seeds for 1 minute, until fragrant. Remove from the pan and leave to cool, then grind them in a mortar or blender with a little water to form a paste.
