Ingredients

  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 100

Method

Whisk together the mustard, vinegar and oil. Add the saffron liquid, lemon juice, shallots, capers, hard-boiled eggs and parsley and mix well together. Season to taste and pour over hot potatoes.
