A simple, satisfying and unusual dessert, ideal for a cold winter’s evening. I like it topped with a scoop of vanilla ice-cream.
Put the sweet potatoes in a pan, cover with cold water and bring to the boil. Reduce the heat and simmer until just tender, then drain. When the potatoes are cool enough to handle, peel them and cut into 1cm (½ in) cubes.
