Once you see how easy squid are to clean and cook, and find out what a true delicacy they are, you will want to include them on your menu more often. This is an exceptionally good salad and could stand on its own as a main course.
To prepare a squid, hold the sac in one hand and pull off the head and tentacles with the other. Some of the insides will come away with the head.
