  1. Heat the stock gently until boiling.
  2. Meanwhile heat the butter and oil in a saucepan, add the leeks and fry gently for 3 or 4 minutes. Add the chopped tomatoes and cook for 5 minutes. Pour over the hot stock. Stir well, check if salt is needed and season with pepper. Cook for 30 minutes over a low heat.
