A large Gâteau Pithiviers is one of France’s most famous pastries. Named for a town outside Paris, the puff pastry cake usually has an almond filling. Here, I’ve recast it as an individual dessert with a hazelnut filling and a creamy caramel sauce to offset the richness of the buttery dough. Using traditional puff pastry is preferable, since you want plenty of rise from even layering.
