This recipe comes from Sondrio, the principal town in the Valtellina, the alpine region of Lombardy. The most famous Valtellinese dish is Pizzoccheri, yet there are many other fine preparations based on the typical ingredients of the area: buckwheat flour, semisoft cheese, cabbage, marvelous funghi porcini and, near the town of Madesimo on the Swiss border, wild blueberries. The Valtellina also produces the excellent red wines I drink most often.
