This is the house sauce of the Ristorante II Morino in Orvieto. It calls for ingredients more readily available in Umbria, yet with a bit of looking you can now locate them in the United States as well. Orvieto is a small town blessed with many riches: a great cathedral, a world-famous white wine, an Etruscan heritage, superb truffles, and friendly, if not overly demonstrative, citizens. Serve this pasta as a succulent first course before a meal of roast pork or veal.
