Ingredients

  • 2 red, green or yellow peppers, deseeded and chopped
  • 45 g unsalted butter

Method

  1. Put the chopped peppers in a pan with 15g of the butter and the sugar.
  2. Cover with a lid and sweat over a low heat until the peppers begin to soften. Add the stock or water and thyme and bring to the boil.
  3. Reduce the heat, then simmer gently, uncovered, for 15–20 minutes.
