It’s a terrible waste to save this tart fruit sauce for the Christmas turkey, as it’s also very good with duck, game, roast ham and cold meats.

Ingredients

  • 450 g fresh or frozen cranberries
  • 200 g demerara sugar
  • finely gr

Method

  1. Put all the ingredients in a pan and bring slowly to the boil, stirring until the sugar has dissolved. Lower the heat and simmer for 30 minutes until the berries are very soft. Serve warm or at room temperature.
