Quinces are not always easy to come by and take a long time to cook, but they are really worth the trouble. Great with game and especially roast pork.

Ingredients

  • 400 g firm quinces, peeled
  • 100 ml water
  • 225 g

Method

  1. Using a very good, heavy knife, cut the quinces into pieces, removing the cores, and put in a pan with the remaining ingredients.
  2. Cook gently over a low heat for up to 114 hours, until dark amber in colour. Purée in a blender.
