A lovey seasonal fruit sauce: tart in flavour and wonderful with oily fish and roast pork.

Ingredients

  • 400 g fresh or frozen gooseberries
  • 100 ml water

Method

  1. Put the gooseberries in a pan with the water and half the sugar and bring to the boil. Reduce the heat and simmer for 10–15 minutes, until softened.
  2. Transfer to a blender and blitz to a purée, then add the remaining sugar.
  3. Return to the pan to heat through. Stir in the butter and serve warm.
