One of the classic French provençale sauces, tapenade takes its name from the dialect word tapeno, meaning caper, which may seem a little strange given that the dominant ingredient of the dish is the wonderful niçoise black olive, so synonymous with the area. Tapenade can be kept in a sealed jar in the fridge for up to 3–4 months.
