One of the great Italian sauces, rich and extremely unctuous in flavour, carbonara does not traditionally contain any cream. Many cooks, however, feel that the addition of a little cream helps to stabilise the sauce. Although it is generally felt Parmesan is the preferred cheese, any Italian will tell you nothing other than pecorino will do!
