Skordalia (or as it is known throughout Greece, Skorthalia) is a delightful sauce of just four components: potatoes, olive oil, garlic and lemon juice - magically simple. It works better when the potatoes are still warm, so don’t let them go cold. In certain parts of Greece, chopped walnuts are added to the potatoes before blending. A great sauce for almost any fish, especially deep-fried. It also makes a useful dip at parties for vegetables or pitta bread.
