This famous Middle Eastern sauce is great not only as a dip to serve with falafel, but also as a wonderful dressing for my bean, mint and chickpea salad.

Ingredients

  • 150 g tahini (sesame seed paste)
  • 3 garlic cloves, crushed
  • juice of 1

Method

  1. Put the tahini and garlic in a blender and add the lemon juice and spices.
  2. Slowly add the hot water through the feeder tube, with the motor running, until the sauce has a dropping consistency. Season and transfer to a bowl.
