Everyone loves ketchup smothered over a burger or crispy fries. You just can’t beat it - sweet and toothsome. The addition of a little heat via some Cajun spices adds another flavour dimension.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 8 very ripe

Method

  1. Heat the oil in a pan until very hot. Add the onion and tomatoes, cover and leave over a high heat for 3–4 minutes.
  2. Add the remaining ingredients, except the lemon juice and seasoning, lower the heat and cook, uncovered, for 25 minutes, stirring occasionally.
  3. Remove from the heat and add the lemon juice. Transfer to a blender and blitz until smooth (f
