Pan-Roasted Mussels with Roasted Chilli Sauce

Ingredients

  • 2 tablespoons vegetable oil
  • 2 garlic cloves, crushed
  • 2 tablespoons

Method

  1. Heat the oil in a wok or large frying pan, add the garlic and nam prik phao and cook for 30 seconds.
  2. Add the mussels in their shells and stir-fry for 1 minute in the sauce.
  3. Add the remaining ingredients and cook for a further 2–3 minutes, or until the mussels have opened.
  4. Divide between 4 bowls and serve with steamed rice.
