In Laos, many sauces are flavoured with garlic, tomato and peppers and are infused with fresh herbs such as basil, coriander and mint.

Ingredients

  • 4 large garlic cloves, unpeeled
  • 3 red chillies, halved lengthways
  • 4 ripe but firm tomatoes, halved
