A wonderful dip for raw vegetables, grilled fish or meat - easy to make and extremely tasty. Sometimes the sauce is blended to a puree, but I prefer it like this, with each ingredient’s flavour shining through individually. Serve with prawn crackers - very moreish!

Ingredients

  • 1 tablespoon vegetable oil
  • 4 spring onions, finely chopped
  • 1 ripe mango, peeled an

Method

  1. Mix all the ingredients in a bowl, adding a little more sambal oelek if you prefer a hotter salsa.
