Indonesian Sweet Potato Soup

The natural sweetness in sweet potato makes it the perfect vegetable for this Asian-inspired soup, which I first prepared many years ago for an American guest who requested a spicy hot soup flavoured with coconut. This is my result - and it went down a treat!

Ingredients

  • 1 litre well-flavoured chicken stock
  • 4 sticks of lemon grass, outer husks removed, chopped

Method

  1. Put the chicken stock, lemon grass, sambal oelek and coriander stalks in a pan and bring to the boil. Reduce to a simmer and cook for 10 minutes.
  2. Add the galangal or ginger and the sweet potatoes to the pan and simmer for 15 minutes, or until very soft. Remove from the heat and leave to cool slightly.
