The food of Burma reflects the influences of the country’s many neighbours, especially the largest, India and China. Indian influences can be seen in the use of tamarind, and Chinese in the abundance of ginger, garlic and soy sauce. recently tasted this sauce while visiting the Burmese-Thai border, where it was served with crisp tempura-fried vegetables.
