Tamarind, from the pods of the tamarind tree, is a distinctive souring agent. It can be purchased in block form (pulp) or as a concentrate or paste. This sauce is great with crispy-fried samosas as a dip, or with other Indian snacks such as bhel poori. It also makes a wonderful glaze for barbecued chicken as it cooks, or for fried fish.
