Less spicy than the Indonesian version of the sauce, This is very good served with spring rolls or satays.

  • 125 ml chicken stock
  • 4 tablespoons smooth or crunchy peanut butter, or

Method

  1. Put the stock in a pan and bring to the boil. Add the peanut butter or peanuts, soy sauce and garlic and simmer for 2–3 minutes.
  2. Transfer to a blender and add the vinegar, sugar, chilli powder and coriander.
  3. Blitz to a coarse sauce-like consistency.
