Also known as Peking sauce, hoisin sauce is a thick, reddish-brown Chinese dipping sauce with a flavour best described as a blend of sweet, salty and spicy overtones. Made from fermented soya beans, sugar, garlic and chilli, it is commonly served with barbecued meats, especially fatty ones, and Peking duck. It also forms the base of many other Chinese-style sauces.

It is possible to buy ready-made hoisin, but here is my version, given to me by a Chinese chef friend.
