The name teriyaki derives from teri, meaning to give shine and lustre, and yaki, which refers to the grilling method of cooking. Traditionally the cooked ingredient is dipped in or brushed with sauce several times before and during cooking. The inclusion of molasses is not strictly traditional but I think it gives a really unctuous taste and shine. In Japan a little grated fresh ginger is also sometimes added.
