One of the most loved sauces in the Chinese repertoire. Serve it with crispy-fried pork or chicken, or as a dipping sauce - wonderful!

Ingredients

  • 150 ml rice wine vinegar
  • 2 tablespoons sake or dry sherry

Method

  1. Put the vinegar, sake or sherry, sugar, ketchup and soy sauce in a pan and bring to the boil. Reduce the heat and simmer for 4–5 minutes.
  2. Stir the cornflour and water mixture into the simmering sauce and cook for a further 1 minute.
