- Heat both oils in a wok over a high heat. Add the garlic, ginger and black beans and fry for 1 minute.
- Add the stock, soy sauce, mirin and sugar, and bring to the boil.
- Simmer for 2 minutes, then stir in the cornflour and water mixture until the sauce thickens.
