This sesame-flavoured sauce, whose name literally translates as ‘fire meat’, can be used as a marinade as well as a sauce to serve alongside barbecued meat and poultry.

Ingredients

  • 1 garlic clove, crushed
  • 1 teaspoon toasted sesame seeds
  • ½ teaspoon

Method

  1. Put the garlic, sesame seeds, salt and sugar in a mortar and crush to a fine paste with a pestle.
  2. Add the remaining ingredients and mix well. The sauce will keep well for 2–3 days in a sealed container in the fridge.
