Ponzu is a traditional dipping sauce or light dressing made from soy and citrus juice. It can be purchased ready-made from Japanese stores, but generally lacks the punch of any freshly made version. Yuzu is a Japanese citrus fruit, often difficult to obtain, but lime is the closest substitute. Fantastic as a marinade for scallops or fresh oysters.
