You can add all manner of ingredients to a basic aïoli, and this is just one version using Indian flavourings. It goes particularly well as a spread in a chicken sandwich or with smoked salmon and bacon - a tasty combination. Also great with grilled salmon or lamb chops.

Ingredients

  • 2 teaspoons vegetable oil
  • ¼ teaspoon asafoetida powder
  • ¼ teas

Method

  1. Heat the oil in a frying pan over a moderate heat and sprinkle in the asafoetida, mustard seeds and curry leaves. Fry briefly, until the seeds pop.
  2. Add the chutney, chilli and a little salt, then cover and cook for 2 minutes to heat the mixture through. Remove from the heat and set aside to cool.
