A wonderfully refreshing, cool sauce based on the idea of a zippy European cocktail sauce, encompassing many cultural twists and turns. Delicious for binding fresh crabmeat or prawns.

Ingredients

  • ½ onion, finely grated
  • 2.5 cm piece of fresh ginger, peeled and grated
  • 1 red jalapeño chilli</

Method

  1. Put the grated onion and ginger in a bowl, then stir in the remaining ingredients. Season to taste and serve.
