Kaffir lime is native to Southeast Asia, where cooks traditionally use the zest and leaves, generally in sauces, or simmered in soups and curries. Ordinary lime zest can be substituted if you can’t find kaffir leaves. Any shellfish or grilled fish would be wonderful with this sweet salty and sour butter sauce, made using French techniques.
