If you enjoy the famous Mexican guacamole, you’ll love this easternised variation, overlaid with the delicate flavours of Indonesia. Use as a spread to go in smoked salmon or roast chicken sandwiches.

Ingredients

  • 2 ripe (but not soft) Hass avocados
  • 1 large vine tomato, cut into small dice
  • 1 tablespoon

Method

  1. Cut the avocados in half and remove the stones. Using a spoon, scoop out the flesh into a bowl, then mash with a fork.
  2. Add the remaining ingredients, with salt and pepper to taste. If you are not serving immediately, return the stones to the bowl to prevent the guacamole from going brown.
