You can use just one type of berry for this sauce, or make up a mixture of soft summer fruits, as I have here.

Ingredients

  • 225 g raspberries
  • 225 g strawberries, hulled
  • 2 tablespoo

Method

  1. Put the fruits in a blender with the icing sugar and water. Blitz for 20 seconds until smooth, then add the lemon juice.
  2. Adjust the sweetness with more icing sugar if necessary, then strain through a sieve and serve.
