In this dessert the lemon juice provides not only the base for a wonderful light pudding but also a tangy lemon sauce, beneath it. The red berry coulis acts as the perfect balance for the tart lemon flavour.

Ingredients

  • 1 tablespoon plain flour
  • 225 g caster sugar

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4.
  2. Sift the flour into a bowl, then add the sugar and the lemon zest and juice.
  3. In a separate bowl, beat the egg yolks and milk together. Add to the flour and sugar mixture and stir well to mix.
