  • 150 g good-quality jam (such as raspberry, strawberry, fig)
  • 1 teaspoon arrowroot, mixed with

Method

  1. Put the jam in a heavy-based pan with 75 ml water and bring to the boil. Stir in the dissolved arrowroot, and cook for 1 minute.
  2. Remove any scum from the surface of the sauce and strain through a fine sieve.
