  • grated zest and juice of 2 lemons
  • 60 g caster sugar

Method

  1. Put the lemon zest and juice in a heavy-based pan along with 300ml water and sugar and bring to the boil.
  2. Whisk in the dissolved arrowroot and cook for 30 seconds, then strain through a fine sieve.
