- Put the water, sugar and liquid glucose in a heavy-based pan and stir with a wooden spoon until the sugar has dissolved.
- Heat the syrup and as soon as it reaches the boil, stop stirring and cook for 1 minute, until a lightly thickened syrup sauce forms.
- Remove from the heat, transfer to a bowl and leave to cool.
