Hagerstown Liquid Yeast

This variation of Millichsatz (milk yeast) cultivates naturally occurring yeasts. The recipe appeared in the Pennsylvania Dutch cookbook Die Geschickte Hausfrau (The Handy Housewife) and in numerous regional publications of the pre-Civil War period. However, I have gone back to the Maryland almanac Der Volksfreund und Hägerstauner Calender for 1852 for this particular version of the recipe, since it originated in the Hagerstown area to begin with.
