Cider Pie in New England, Apple Butter Pie in the Mid-Atlantic states, there are innumerable names and regional nuances for this early American classic. The original Pennsylvania Dutch method of malting it, however, is similar to that for the traditional flat fruit tarts of southwestern Germany and France. The filling for this recipe comes from a member of the Zion Mennonite Church in Souderton, Pennsylvania.
