After visiting Bethlehem, Pennsylvania, in 1906, food writer Julia Davis Chandler observed that Moravian sugar cake was baked throughout the area on Saturday so that it could be served for Sunday evening supper.9 Each Moravian community, be it Bethlehem or Lititz in Pennsylvania or Old Salem in North Carolina, made sugar cake in slightly different ways.
