Shoofly Pie is a breakfast cake meant to be eaten early in the morning with plenty of hot coffee. It first appeared in 1876 at the Centennial in Philadelphia under the name Centennial Cake. Recipes for Centennial Cake were circulated many years afterward among upcountry cooks, but it was the alternate names — Granger Pie and Shoofly Pie — that became the most popular, the latter doubtless in reference to the brand name of molasses that went into the original recipe.
