One of the immediate by-products of the eruption of Mt. Tambora in 1815 and the summerless year that followed was a spate of handbooks to help farmers deal with natural disasters. Johann Fürst (1785—1846) wrote the most popular of these guides, Der Verständige Bauer (The Prudent Farmer), which appeared in 1817. It was a hit in Europe and widely read among the Pennsylvania Dutch. This is one of Fürst’s recipes.
