Mifflinburg Rose Soup

Popular in the Buffalo Valley area of Union County into the early part of this century, this old-fashioned soup was made only at Christmas. It served not as a starter course for Christmas dinner but as a refreshment for the belschnicklers who went from house to house begging for treats. Many cooks accompanied it with almond or hazelnut cookies decorated with an icing made from rose hip jam.
