Kookoo sabzi is the most famous of a whole range of kookoos. The permutations are endless, but other popular ingredients are cauliflower, potato, lamb’s brain, French beans, and sugar – the recipe can be made as a sweet breakfast or pudding option (see separate recipe below). But my favourite kookoo is aubergine – kookoo-ye-bademjan.
