Jarabe de Algarrobina is the sweet syrup made from the fruit of the algarrobo tree, which is a kind of mesquite or carob tree which grows extensively in the northern deserts of Peru. Paired with Pisco, it makes a delicious creamy cocktail.

Ingredients

  • 2 egg yolks
  • 4 tsp sugar
  • 8 tbsp algarrobina syrup

Method

Preparation

Blend all ingredients together on high speed for 1 minute. Serve well chilled, decorated with a light dusting of ground cinnamon.
