This is Cucho la Rosa’s recipe. The drinking of chicha, Andean corn beer, was an integral part of ceremonial life in Inca culture. Quechua people would always toss a drop onto the floor as a thanksgiving to the gods before drinking. Purple corn gives a distinctive color to this refreshing nonalcoholic chicha morada. You will always find it on the Peruvian luncheon table in summer.
