Wash and peel the yuca, cut in half lengthwise and then cut each half again lengthwise into three parts. Place in a large pan of salted water and bring to the boil. Cook until the flesh of the yuca is tender when pierced with a fork but not too soft (about 20–25 minutes, depending on the size of the yuca). Strain all the water from the yuca and leave to cool in a colander.
